Beef & Spinach Cannelloni

Tender beef and fresh spinach, wrapped in fresh pasta then cover in delicious tomato and garlic sauce, topped with molten mozzarella.

  • Serves 4

Ingredients

2 tablespoons olive oil
1 onion, finely diced
1 clove garlic, crushed
500g lean beef mince
100g fresh spinach leaves, roughly chopped
1 cup (80g) finely grated Parmesan
Pinch ground cinnamon
700g tub Latina™ Fresh Italian Tomato and Garlic Sauce
250g pack Latina™ Fresh Cannelloni Sheets
1/2 cup (40g) finely grated Parmesan, extra

Method

1. To separate Cannelloni sheets, wrap the sheets in plastic wrap and heat in microwave on HIGH/1100 watts for 15 seconds.
2. Preheat oven to 200°C (180°C fan forced).
3. Heat oil in a fry pan, add onion and cook until soft. Add garlic and beef mince and cook for 5 minutes or until meat has browned. Remove from heat, add spinach, Parmesan and cinnamon to mince mixture. Transfer mixture to a bowl and allow to cool, season to taste.
4. Combine Latina sauce and 1/2 cup water. Spread 1 cup of sauce over the base of a shallow 3 litre capacity ovenproof dish. Spoon 1/4 cup mince mixture along the base of the short end of Latina pasta. Roll to enclose the filling and place on top of sauce in baking dish, seam side down. Repeat with remaining cannelloni sheets and filling.
5. Pour over remaining sauce. Cover with foil and bake for 30 minutes.
6. Remove foil, sprinkle with extra Parmesan and bake a further 15 minutes or until cheese has melted and pasta is tender.

Add fresh ricotta to the beef mixture for an added cheesy kick!
