Gnocchi Potato Salad with Crispy Bacon
It’s hard to go past the classic combination of creamy mayonnaise, crispy bacon, chives and tender gnocchi.

1 large salad to share
100g lean bacon, cut into thin strips
625g pack Latina™ Fresh Potato Gnocchi
cup whole egg mayonnaise
2 teaspoons Dijon mustard
¼ cup chopped fresh chives
Freshly ground black pepper, for serving
1. Cook bacon in a hot non-stick frying pan until crisp. Remove from pan and drain on absorbent paper.
2. Add Latina gnocchi to large saucepan of boiling water. Remove gently with a draining spoon as soon as gnocchi floats to the surface (about 2 minutes).
Drain well.
3. Combine mayonnaise and mustard in a large bowl; add warm drained gnocchi and two thirds of the chives. Stir to coat with dressing.
4. Sprinkle with bacon and remaining chives and serve warm or cold.
