Gnocchi with Pesto Mayo

1 large salad to share
625g pack Latinaâ„¢ Fresh Potato Gnocchi
1/3 cup Homemade Basil Pesto
1/4 cup whole egg mayonnaise
1/4 cup semi-dried tomatoes, roughly chopped
1. Add Latina gnocchi to large saucepan of boiling water. Remove gently with a draining spoon as soon as gnocchi floats to the surface (about 2 minutes).
Drain well.
2. Combine pesto and mayonnaise in a large bowl. Add warm drained gnocchi and tomatoes and toss to coat in dressing.
Serve warm or cold.
