Minestrone Soup with Tortellini and Parmesan
A hearty soup loaded with fresh vegetables and Latina™ Fresh Mixed Veal Tortellini for an authentic Italian taste.

425g tub of Latina™ Fresh Italian Tomato and Garlic Sauce
375g pack Latina™ Fresh Mixed Veal Tortellini
4 cups (1 litre) water
400g can chopped Italian tomatoes
1 medium onion, finely chopped
1 medium carrot, finely diced
2 stalks celery, finely diced
1 cup sliced green beans
1 medium potato, finely diced
400g can red kidney beans, drained and rinsed
½ cup chopped fresh parsley
1 cup parmesan cheese, grated to serve
1.Combine Latina™ Fresh Italian Tomato & Garlic Sauce, water and canned tomatoes in a large saucepan, and bring to the boil.
2.Add onion, carrot, celery, green beans, and potato, reduce heat and simmer for 30 minutes.
3.Add beans and half of the parsley and continue to simmer gently for a further 10 minutes.
4.Cook Tortellini according to pack directions, drain and add to Minestrone.
5.Add 1 cup grated Parmesan cheese and serve with remaining parsley.
A tasty accompaniment - Grilled cheese bread
Slice breadstick and place onto a baking paper lined tray. Spray with olive oil spray and top with generous amounts of remaining grated Mil Lel Parmesan cheese. Place under grill and cook for 5 minutes or until golden brown.
A cheesy garlic or herb bread will make the perfect accompaniment to this meal.
