Tomato & Basil Agnolotti Bites
Succulent tomato and fresh basil teamed with everyones favourite Ricotta and Spinach Agnolotti ensure these bite-sized morsels are brimming with zesty flavour.

Makes 30 skewers
1/2 x 375g pack Latina™ Fresh Ricotta and Spinach Agnolotti
250g punnet cherry tomatoes, cut in half
30 small fresh basil leaves
1 tablespoon extra virgin olive oil
2 teaspoons balsamic vinegar
30 small skewers or toothpicks
1. Add Latina agnolotti to large saucepan of boiling water. Return to the boil and cook for 5 minutes. Drain and cool slightly.
2. Skewer one basil leaf, one piece of agnolotti and half a cherry tomato for each bite.
3. Combine oil and vinegar in a small shallow dish and use for dipping.
